Now that the summer is here and the weather gets hotter from day-to-day, a meatless dish seemed perfect for a hot, sunny day. So last Sunday I thought I would cook a quite light dinner.
The croque-madame is one of those excellent sandwiches that's rich tasting, and fit for any time of day. There's nothing like the smell and taste of a grilled ham and cheese sandwich. I'm fairly obsessed with it actually.
Mixed Green Salad with Avocado.
To make the dressing:
Mix together the olive oil, fresh lemon juice, and sea salt and pepper in a small bowl. Taste and add more olive oil or lemon juice if necessary.
Just before serving, whisk the dressing, pour over the salad leaves, toss and serve.
This salad is visually beautiful and colourful, the smell of the avocado is seductive, and it is meant to thrill your taste-buds! Not to toot any horns or anything, but I make really good salads.
Vegetable Spring Rolls (frozen) and Sweet Chili sauce.
Vanilla ice cream with cherry sauce and roasted mixed nuts.

it is a good thing i had late breakfast at 9 am or i would be really upset looking at this. all of it. but i want mine sandwich to be the male, no egg on mine please. all of this is mouth watering.. and mango is my favorite fruit.

ReplyDeleteI had a couple of really great tomatoes and made a tomato pie with them last weekend. Pretty good - although I'll try another recipe next time.
And my current favorite is Caprese Salad, using basil from my potted garden.

As many people have said already, NOW I'M STARVED! The egg on the sandwich looks awesome, minus the ham ( veggie here) I wonder if it would work with a grilled cheese and tomato? I know one thing for sure, I would have no problem eating at your house. My five: 2 poached eggs on toast/ veggie turkey and cheddar with avacado on Italian bread/Potatoes Brava/Cheese plate (monchego, cheddar and blue with apples and grapes and a nice chardonay/Molten chocolate cake

Eggs of any kind are fine with me. But no ham. ham and I are not friends. that's ok. I love fruit and nuts and fruit and nuts over and over. Twice today, I have almond butter with celery and raspberry lemonade. YUM!!!!!! It's summer, it's light and gives me energy to clean my bathrooms. hahaha. Thanks for joining me. I'll be back :D

ReplyDeleteThere is a salad I like a lot that basically consists of Romaine lettuce, mandarin oranges, sliced almonds, red onion, and raspberry vinaigrette. I can't remember off-hand whether there are any other ingredients, but my wife makes it, and it is YUMMY! When we have that, I could eat that as the whole meal, and I don't even miss the fact that we're skipping meat.

I'm not overly fond of food but I always love your food posts! In fact, I thought of you during the week when I was eating some tomatoes. I can't eat croque because of the wheat but I can eat souffle and I love that! It is just egg and cheese and I really enjoy it with salad.
