A Genius Sauce: Pesto Recipe + Have a Yummy Weekend!

My love of sandwiches knows no bounds. And while I love a good vegetable and cheese sandwich, I'm already tiring of the usual combos. But a friend recently introduced me to a creamy, rich sauce...pesto.

Pesto is a great sauce, literally; always tasty on just about anything! total game changer. Toss it with pasta, spread it on sandwiches or alone, pesto makes such a delicious sauce. And it's easy enough to make.

Pesto is a sauce originated in Genoa, Italy (Pesto Genovese) and traditionally consists of leaves of basil, fresh garlic and olive oil, pine nuts and..
Parmesan cheese. Whiz all ingredients in your food processor and you can't go wrong.

Pesto Sauce Recipe

Ingredients

2 cups packed fresh basil leaves
2 cloves garlic
1/4 cup pine nuts
2/3 cup olive oil
1/2 cup grated Parmesan cheese

Directions

Combine the basil, garlic, and pine nuts in a blender or food processor and pulse until coarsely chopped. Add the olive oil and process until fully incorporated and smooth. Transfer the pesto to a serving bowl and mix in the cheese.

Pesto sauce is usually found in the grocery store. They sell it in little glass jars right alongside the jars of pasta sauce. But we love making our own sauce, right?
I like to put pesto on my sandwiches or treat myself a single happy yummy spoonful...my current favourite.

A good sandwich combo is: Pesto sauce, Cheddar cheese or Mozzarella cheese, arugula, cherry tomatoes, cucumber ribbons, and Ciabatta bread.

How to make and serve attractively a pesto sandwich.

Ingredients

2 tablespoons pesto sauce
1 package Arugula
1 Cucumber, cut into ribbons using a potato peeler
2 Cherry tomatoes
3 ounces fresh Mozzarella, sliced or 2 slices Cheddar cheese
2 slices Ciabatta bread grilled, if desired
1 tablespoon balsamic vinegar

Directions

Spread pesto sauce on bread. Layer bottom half of bread with cheese, then arugula, tomatoes, and cucumber ribbons. Finally drizzle some balsamic vinegar over it and serve. Yum! Your new favourite sandwich is waiting for you!

Note: If storing overnight, top bread with rocket leaves first, then pesto sauce to keep sandwich from getting soggy.

Pesto sauce is a nice change to the ordinary. Along with the piquant flavour of Parmesan cheese, this sauce has subtle hints of basil to round out the flavour. If you haven't had it before, try it- you'll like it.
Pesto sauce gives your sandwich a bright, aromatic flavour and adds protein as well.
Uses are of course endless...

  6. no pesto for me, i don't like spices other than salt and pepper, mayo or mustard goes on my sandwich.. but i do have to say this sandwich is so beautiful i might have to try it IF i were there and you made it.

  15. We love pesto too... It goes with so many foods.... Your sandwich looks GREAT. Yum!

    My favorite thing to put on sandwiches is Mayonaise... My favorite sandwich is a big piece of homegrown tomato sliced on a piece of white bread with mayonnaise....

    BUT--since mayo is not good for us, these days I use alot of mustard.. I like it too.

  25. I do sometimes spread it with my mayonnaise on sandwiches, or dilute a bit of it with some more olive oil and more garlic and black pepper, when I make an avocado salad, or spread some on chicken breasts before I roast them in the oven (or fish). Good stuff!
