Now that the summer is here and the weather gets hotter from day-to-day, a meatless dish seemed perfect for a hot, sunny day. So last Sunday I thought I would cook a quite light dinner.
A croque-madame is one of those light meals that always hits the spot. There's nothing like the smell and taste of a grilled sandwich. I'm fairly obsessed with it actually.
Mixed Green Salad with Avocado.
To make the dressing: Mix together the olive oil, fresh lemon juice, and sea salt and pepper in a small bowl. Taste and add more olive oil or lemon juice if necessary.
Just before serving, whisk the dressing, pour over the salad leaves, toss and serve.
This salad is visually beautiful and colourful, the smell of the avocado is seductive, and it is meant to thrill your taste-buds! Not to toot any horns or anything, but I make really good salads.
