one of the easiest and healthiest cakes I've made in a long time. Seriously. It's awesomely rich, moist and flavourful, although it has no butter or eggs. I bet you have every ingredient in your kitchen.
The fact that it has no butter or eggs just adds to the awesomeness.

Easy Chocolate Cake

Serves 16

Ingredients

1 1/2 cups flour
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon vinegar
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup Canola oil (vegetable oil)
1 cup cold water

Directions

In a large bowl, mix flower, sugar, cocoa powder, salt and baking soda. Make three separate holes in the flower mixture. In one hole put vanilla; in another hole the vinegar, and in the third hole the canola oil.
Pour the water slowly over the mixture. Use the whisk to mix everything together for 2 minutes. Pour into a lightly greased 8 by 8 inch baking pan.
Bake at 350 degrees F (177 degrees C) for 30 to 35 minutes or until a toothpick inserted into the centre comes out clean.

Serve with sliced bananas or whipped cream, or dusted with powdered sugar.
