Time-Off + Have a Relaxing Weekend



So it has been a bit of a hectic week to say the least...you may or may have not noticed, but I haven't been around much lately.
I just thought I would mention that since I don't want anyone to feel like they're being ignored or anything. I'll be back to normal on Tuesday, but I feel I need a bit of a rest right now.

Five Likes Tuesday

Croque-madame. {French Grilled Sandwich.}

Now that the summer is here and the weather gets hotter from day-to-day, a meatless dish seemed perfect for a hot, sunny day. So last Sunday I thought I would cook a quite light dinner.

A croque-madame is one of those light meals that always hits the spot. There's nothing like the smell and taste of a grilled sandwich. I'm fairly obsessed with it actually.
Croque-madame is a hot ham and cheese (typically Gruyere or Emmental) grilled sandwich-originated in France, served with a fried egg, sunny-side up on top; which becomes a croque-monsieur if you don't top it with a fried egg.

Mixed green salad with mango that gives a perfect touch. (One large ripe mango.) Pour Balsamic vinegar and sea salt and pepper over the salad, then olive oil. Toss to mix. It is visually beautiful and colourful, the smell of the mango is seductive, and it is meant to thrill your taste-buds! Not to toot any horns or anything, but I make really good salads.

Vegetable spring rolls (frozen) and sweet chili sauce.

Vanilla ice cream with cherry sauce and roasted nuts in caramel.

How Do You Manage Stress?

Have you ever stressed out? Sure, we all have. In these tough economic times, when the daily grind becomes too much, that many of us are stressed out is no surprise. I know that stress is part of life, but it doesn't have to rule our lives!
I often feel overwhelmed by my busy life, and I do struggle in order to manage professional and personal responsibilities, but I've decided to live a more balanced, less stressful, deliberate life and fight stress by de-cluttering my life and mind.

In fact, I find myself tired of having to excavate the kitchen table before I can serve dinner. Let alone, the junk drawer in the kitchen or the piles of cloths in bedroom. I actually often can't find my car keys amid the piles on my counter. So, being surrounded by more things than I can manage, my life just seems to be out control. There's no question, clutter is an ongoing cause of stress. 
I am one of those people who want to do it all, but to be honest with you, I probably can't; at least not without paying the price. There's no question, multi-tasking is another cause of stress.
So, I've decided to try a new approach realizing the harmful effects of stress- and also to develop several positive, healthy habits. Here's my "How to reduce stress" list...

De-cluttering my home (donating to local  charity any in good condition item I am not using. I would never want to part with my memento box and stuff from my parents though.)

Stopping judging myself. (I may not be my own hardest critic, but the only real judge of me, is definitely me!)

Approaching big tasks one step at a time.

Trying to pace instead of race. The world won't end, after all!

Tastes of Summer + Have a Great Summer Weekend!

Hello, everyone! It's good to be back! Gosh, how I've missed you all!

So, now that the bounty of summer fruits and vegetables begin to appear almost everywhere-in fields, in farmer's markets, and even in your grocery stores, it is a good time to think about salad recipes, inspired by the Mediterranean, where vegetable is an important part of cooking.
In this time of year, what could be better than a salad which glows with the warm and seductive tastes of the Mediterranean? What a better way to celebrate the beginning of Summer than by enjoying a delicious, colourful, and refreshing salad.
For those of us with little inclination and even less time to spend in the kitchen, here is the authentic Greek tomato salad recipe. (The famous Horiatiki Salata, "rustic" salad. Pronounced haw-ree-ah-tee-kee sah-lah-tah.)  
For this simple but remarkably satisfying Greek summer salad, you need just a few good quality ingredients. I really love this salad...
