It's a perfect picnic cake, after-dinner cake, teatime cake. And it's a cake that is going to be made a few times over in my kitchen this spring season - Plus, it's so simple and easy to make!

Easy Yogurt Cake

Ingredients

1 cup all-purpose flour, sifted
1/2 cup plain whole-milk Greek yogurt
1/2 cup plus 2 tablespoons granulated sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract
Pinch of salt
1/4 cup vegetable oil
1 large egg
1 teaspoon grated orange zest, optional
1 tablespoon orange juice, oprtional
Confectioners' sugar, for dusting

Directions

Preheat oven to 350 degrees F (175 degrees C) with rack in middle position.
Butter and flour an 8-inch round cake pan.
In a medium bowl, whisk together flour, 1/2 cup plus 2 tablespoons sugar, baking powder, baking soda, and salt.
In a separate bowl, stir together yogurt, vegetable oil, egg, and vanilla.
Alternately add flour mixture and yogurt mixture to stand mixer bowl in three additions, starting and ending with flour mixture.
Once everything is combined, pour batter into the prepared pan, smooth top, and bake until a toothpick inserted into centre of cake comes out clean, 30 to 35 minutes.
Cool cake in pan for ten minutes.
Transfer cake to wire rack to cool completely.
When cake is cool, dust with confectioner's sugar using a fine mesh sieve or a sifter and serve.
