Although the first day of autumn is on September 22 this year, fall is definitely in the air...
Every year by the end of summer I am always really excited for fall. I love summer but I'm really looking forward to the fall season. It's that time of year again where everywhere you go you see pumpkins and winter squash.
I love pumpkin everything!
This delicious side dish recipe is perfect for your fall, winter or holiday table.
Orange Peppercorn Squash Wedges
Serves 2-4 as a side vegetable.
Cut a large squash into wedges.
Peel away the skin and remove the pith and seeds.
Place in a baking dish and dab with butter.
For four wedges, dilute 2 tablespoons of marmalade with a little water to form a thin sauce.
Add the juice of an orange and a lemon, and pour over the squash.
Scatter 1-2 teaspoons of coarsely crushed black peppercorns over the whole, and bake for about 40 minutes in a moderate oven, 356 degrees F (180 degrees C) until soft, topping up with extra water if the sauce dries up.
Anyone for squash?
Hope you have a great weekend! xx
