Rocket and Prosciutto Salad with Strawberry Dressing

So the other day, I went out for lunch with a friend of mine. I had...
a thoroughly enjoyable light meal Chez Michel salad; and it was delicious! A tasty bowlful of goodness, actually.

An excellent and deliciously refreshing salad.

For this simple but satisfying salad, you need just a few good quality ingredients.

Rocket and Prosciutto Salad with Strawberry Dressing 

Serves 2

Ingredients

Romaine lettuce - about two handfulls, rinsed and chopped into bite-sized pieces.
1 bunch arugula (wild rocket), washed, dried, and trimmed.
6 slices prosciutto, about 3 ounces total
1 Granny Smith apple, cored and thinly sliced
3 strawberries, rinsed, hulled, and quartered to decorate the top of the salad
6 fillets of an orange
strawberry dressing
1/4 teaspoon salt
Fresh ground black pepper

Directions

Feel free to switch up the veggies to your liking.
Pour dressing over salad and toss until coated.
Season with salt and pepper.
Pile the salad into the centre of a salad bowl.
Top with strawberries and apple slices; serve immediately.

Note: You can use frozen strawberries, but you have to defrost them first.

Tip: You can add a little water to adjust the consistency of the dressing to your liking.
Note: And in case strawberry isn't your thing, you can omit it and you'll still have a fabulous freshly made salad. This is by far the best salad I've ever had. Not only is it beautiful, but it's also healthy and delicious.
