Easy Chicken - Egg - Potato Salad

For those of you who are new readers Five Things Tuesday was started a couple of years ago as way to sit down and reflect on what the past days have been like for me.

Pretty glass jars.

Tasting Melon and Prosciutto Salad. This is the simplest summer salad. Amazingly light and tasty.

Melon and Prosciutto Salad Recipe.

Ingredients

1/2 honeydew melon, halved, seeded, peeled and cut into thin wedges
6 thin slices prosciutto
A small handful of arugula
Honey Vinaigrette
Freshly ground black pepper
A chunk of Parmesan cheese (optional)

Directions

Cover the arugula with the sliced melon, about 3-4 slices.
Top with 3-4 slices of prosciutto.
Add 1-2 grinds of freshly ground black pepper and drizzle with 1-2 tablespoons of vinaigrette.
Use a vegetable peeler to shave thin pieces of Parmesan over the top (optional).

Honey Vinaigrette

Ingredients

2 tablespoons extra-virgin olive oil.
1 tablespoon balsamic vinegar.
1 teaspoon honey.

Directions

To make the Vinaigrette, you simply combine all of the ingredients in a blender or food processor. And process until smooth.

Note: Tweak this Vinaigrette recipe to your liking, by adjusting the amount of each ingredient.
