A Genius Sauce: Pesto Recipe + Have a Yummy Weekend!

My love of sandwiches knows no bounds. And while I love a good vegetable and cheese sandwich, I'm already tiring of the usual combos. But a friend recently introduced me to a creamy, rich sauce...pesto.

Pesto is a great sauce, literally; always tasty on just about anything! total game changer. Toss it with pasta, spread it on sandwiches or alone, pesto makes such a delicious sauce. And it's easy enough to make.

Croque-madame. A classic French dish {Hot grilled ham and cheese sandwich with a fried egg on top.}

Now that the summer is here and the weather gets hotter from day-to-day, a meatless dish seemed perfect for a hot, sunny day. So last Sunday I thought I would cook a quite light dinner.

The croque-madame is one of those excellent sandwiches that's rich tasting, and fit for any time of day. There's nothing like the smell and taste of a grilled ham and cheese sandwich. I'm fairly obsessed with it actually.

Croque-madame is a French dish, consisting of a hot grilled ham and cheese (Gruyere or Emmental) sandwich served with a fried egg on top; which becomes a croque-monsieur if you don't top it with a fried egg.

Mixed Green Salad with Avocado.

To make the dressing:

Mix together the olive oil, fresh lemon juice, and sea salt and pepper in a small bowl. Taste and add more olive oil or lemon juice if necessary.
Just before serving, whisk the dressing, pour over the salad leaves, toss and serve.

This salad is visually beautiful and colourful, the smell of the avocado is seductive, and it is meant to thrill your taste-buds! Not to toot any horns or anything, but I make really good salads.
